Mi Cocina: The Quick Facts

You may know Mi Cocina as a commercial kitchen incubator for start-up businesses. But you may be wondering, how can Mi Cocina help me with my business ideas or plans?  But do you find yourself wondering, what does that entail exactly?

Rico Duran oversees Mi Cocina. He works alongside Sergio Serna, the building manager. Together, they work to provide a functional space for their 18 tenants who are all entrepreneurs in the food industry.

Mi Cocina offers a space that is up to code so that tenants can focus on securing their certifications for food management. Depending on the business, tenants will need approval from the Minnesota Department of Agriculture or Health Department. Additionally, tenants do need a ServSafe certification, (which LEDC can help people get!)

Tenants can lease the space(s) by the hour and have access to the following amenities and spaces:

  • Prep station tables
  • Washing stations
  • Dry storage
  • Cold storages (fridge & freezers)
  • Commercial oven
  • Stove tops
  • And much more!

Currently, there are all kinds of businesses who are a part of the Mi Cocina incubator: food trucks, catering services, bakeries, an ice cream shop, and even a juice press business!

Mi Cocina is a great place for entrepreneurs who want to test their business ideas out or for those who want to further grow their established businesses (Without the hassle of spending too much money on space and equipment! As one of LEDC’s Small Business programs, tenants of Mi Cocina can receive specialized assistance on topics like business planning, organizing menus, registrations, the process of licensing, marketing, and more.
