Hi, my name is Gabriela Alemán. I’m the owner of Texana Specialty Cuisine. We specialize in birria, street tacos, loaded fries, and pizza, which is our customers’ favorite dish. We are currently located in Woodbury, you can find us at Harley Davidson which is in Saint Paul, and we are there from Thursday to Sunday.

My business was inspired by my grandmother who is from Mexico, I was born in Texas; she taught me how to cook since I was a child, so I started selling food to my friends and from there I started in November 2020 in the middle of the pandemic and my food truck arrived in February 2022 and it has been a lot of work to get here.

In that process I needed equipment for my food truck, and I found LEDC after researching resources, and I connected with Rico who was very helpful.

LEDC gave me a loan to be able to buy a piece of equipment to be able to pass my inspection with Washington County, and also apart from that what I also liked is that they connected me with classes to improve my business and entrepreneurship education.

Right now I am taking classes that are very beneficial to me as a small business owner.

LEDC also assisted me with a commercial kitchen, to assist with food preparation, and to be more efficient in preparing and selling food.

Even LEDC, Rico and Sergio have helped me and given me a job when they saw that I had no work that as soon as my food truck passed the inspection they gave me catering opportunities, they gave me space at an event, and for that I am very grateful.

To any person who is starting his business right now I think LEDC is a place where many people can learn everything that I stressed myself to learn; they cut the job in half and are there to assist us with more than one can ask for.

I definitely encourage anybody that wants to donate and collaborate with LEDC to definitely do so, it’s a good place for small business owners like myself to be able to help us start and pursue our vision and our goal so I would definitely encourage you to be a part of what LEDC is doing in the Latino community.

We will be operating all year around, during the winter we will be more of a curbside pickup service exclusively offering Mexican winter dishes like tamales and pozole
