Greater MN story: Meet los compadres of Los Compadres

Porfirio and Saul are immigrants from Mexico and have lived in Rochester, MN for the last 15 years.

Before Porfirio became a business owner, he managed a Chipotle fast-casual chain restaurant for 2 years. During this time, Porfirio obtained deep knowledge about quality control, cost, waste, and customer service and was motivated to develop his own restaurant concept.

In 2017 Porfirio and Saul founded Los Compadres, LLC beginning as a humble but mighty business, consisting of a food truck. Los Compadres saw high demand for their dishes at catered private parties, and they realized the potential of having a more established restaurant space in town to host their customers. Opportunely, The Apache Mall in downtown Rochester had available space in its food court.

With the support of a $50,000 LEDC loan the partners were able to sign the lease and operate by the summer of 2018.

The success and following built at the high-traffic mall location in Rochester gave Los Compadres the confidence to expand in southern Minnesota. In July of 2020, they bought a second food truck and decided to prioritize growing their customer base in nearby town, Byron, MN.

The food truck quickly became a popular stop with Byron neighbors, enabling Porfirio and Saul to open their first sit-down restaurant location there in April of 2021.

Inspired by the vision and the partners’ tenacity, the LEDC Business Development team is working with Porfirio and Saul to get additional financing so they can open their next restaurant location, where it all began, in Rochester.
