Loan to Location: El Charrito puts down roots on the West Side
“It’ll be my first big snowstorm here, so we will see…!” Maurico Medina greets the incoming lunch hour customers with light snow flurries on their coats. It has been a month since Taqueria El Charrito opened its first brick and mortar location in January 2023, Mauricio has already seen the advantages of expanding outside the original food truck model. The most significant contrast being the freedom to operate in all four seasons. Though on February 21st with a winter weather advisory notice, he pours horchata into a to-go cup for a customer—before the storm some still opt for the restaurant’s convenient take-out options.
In the warmer months, his memorable red food truck of the same name used to be parked outside the Walmart on Robert Street in St. Paul. He found this new location, one neighborhood over, on the West Side. He had to tour sites for many months throughout the Twin Cities with not much success, before the day he drove down the familiar Cesar Chavez Street. His eye caught a sign in the window, and in his gut, a good feeling.
Now, even in its early stages, the advantages of space have been evident, Mauricio himself noting, “we have seen a lot more customers”.
Customers of all ages can come to enjoy meals in larger groups and sit below the glittering sombreros that nod to the name, “little cowboy”. Even more they can stay to take in the colorful atmosphere at a more relaxed pace, thus establishing a relationship and regularity. The location has been especially lucrative with the Minnesota Community Care Center across the street and many locals seeking out his menu items that are to this corner, such as his delicious alambres. For those commuting and looking for their former favorites of quesadillas, burritos, taco combos and consommé soup, there is a shared parking lot available.
Mauricio has managed the business mostly himself, utilizing the skills and advice of his mother’s talents on crafting their recipes. Now, he is growing his team to address demand.
“He took over a spot that was closed down and he hired six employees, it makes me excited that he is building opportunities for others”, highlights Christian Benitez, LEDC Business Development Associate.
Christian worked closely with Mauricio for almost a year providing finance education and putting together a loan proposal, this assistance eventually would lead Mauricio to secure a loan with LEDC in November of 2022.
Mauricio first found LEDC through the Mi Cocina incubator kitchen. He received counsel from Rico Duran to refine his concept and begin operations gradually in April of 2020. As his business became more successful, booking outdoor events and parties, the idea of the physical location only enhanced his dream.
Ultimately, in rain, shine or snow, access to capital with LEDC’s CDFI capacities has driven El Charrito towards big promises this year.
